And now, for another installment of Bachelor Cooking With Pat:

This one was easy:

100% "leftover" ingredients!


What's needed:
1 Salmon Fillet (or more, if there's more than one person, but then it's not "bachelor cooking" is it?)
(They're on sale for $4.95/pound right now from Safeway) (Around here, that's incredibly cheap. The halibut is currently $17.95/pound)
Seasoned croutons
Mustard (I use Safeway brand Stoneground)
Soy Sauce
Parsley or something similar
Parmesan cheese (I use the fat-free variety - I can't tell the difference)
Baking pan
PAM (or something, but PAM's non-fat, 0-calorie, and, most importantly, comes in a spray can!)
Ziploc Bag
1 Spatula
1 Hammer

Turn oven to 350 degrees (Fahrenheit) and turn it on.
Spray the baking pan with the PAM
Spray the salmon fillet with the mustard: a very light coat on both sides. Squirt it on, then use the spatula to smear it around
Fill the Ziploc bag half-full of crutons
Hit them a lot with the hammer
Dump the crumbs onto a plate
Toss the mustard-coated salmon onto the pile of crouton crumbs, then roll it around a couple of times while pouring a little bit (not very much) of the soy sauce on it.
Put the salmon in the baking pan and sprinkle the parsely over it.
Then sprinkle the parmesan cheese over it.
Put it in the over, once it reaches temperature, and leave it there for 15-20 minutes, depending on how impatient you are.

It goes well with Rice-a-roni and Birds-Eye Easy-steam green beans (reheated from last night in the microwave)

And that's it: 10 minutes of preparation (5 of which is smashing things with a hammer so I'm not sure if it really counts), and 20 minutes of baking time. If you started an episode of Farscape, paused it to make dinner after the teaser, and again after 20 minutes, you should be done eating just about as the episode ends.

With a couple of slices of bread, a slice of swiss cheese, and a bit of mustard, the leftover fillet makes a great cold sandwich the next day.
